Imidlertid er de essentielle aminosyrers indbyrdes m\u00e6ngdeforhold og deres m\u00e6ngde i relation til ikke-essentielle aminosyre meget varierende i forskellige proteinkilder.&nbsp;<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">N\u00e5r de essentielle aminosyre i f\u00f8dens proteiner er tilstede i samme indbyrdes m\u00e6ngdeforhold, som i de proteiner der skal opbygges i organismen, udnyttes de i st\u00f8rst muligt omfang og man siger da, at de har h\u00f8j biologisk-v\u00e6rdi. &nbsp;<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Afg\u00f8rende for et proteins biologiske v\u00e6rdi er dets indhold af den \u201cbegr\u00e6nsende aminosyre\u201d, &#8211; den essentielle aminosyre der findes mindst af i forhold til organismens behov. Det er netop s\u00e5dan, at n\u00e5r den begr\u00e6nsende aminosyre er opbrugt, standser proteinopbygningen\/proteinsyntesen, og de resterende aminosyre g\u00e5r tabt for proteinsyntesen.&nbsp;<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Animalske proteiner har h\u00f8jere biologisk v\u00e6rdi end vegetabilske proteiner. \u00c6g og m\u00e6lke-protein har begge biologisk v\u00e6rdi op mod 100.&nbsp;<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Ofte vil blanding af forskellige proteiner med forskellig biologisk v\u00e6rdi i samme m\u00e5ltid kunne supplere hinanden, s\u00e5ledes at man opn\u00e5r en bedre nytte v\u00e6rdi, end af de enkelte proteinkilder hver for sig.
